Salvador and Esperanza are a couple of undertaking coffee growers. Since harvest 2017, Salvador has turned to a selective harvest to prepare its coffee in honey, the trademark of its production. The incredible clean cup obtained is the result of many years of work, experimentation and quality analysis in collaboration with Cafeologo to achieve a significant differentiation compared to the fully washed processed coffees by its neighbors. Harvested at full maturity, the cherries ferment in parchments and dry slowly, key to its honey preparation. Salvador is young and already father of five children. He learned coffee from his father and mother, who are also producers. Salvador is tenacious, he loves challenges. He shares the tasks with his wife. Salvador is in the fields with the pickers. Esperanza manages processes, washing cherries, drying on patios or on african beds while taking care of children and the home. Salvador has been working with Cafeologo since 2010 and was one of the first to produce specialty coffees in Chiapas. Its objectives are to increase the number of plots, replant existing plots and improve post-harvest processes for more consistency in cups.
