About the Coffee

This is a characterful 100% Robusta from Ea Tân Cooperative in Đắk Lắk Province, Vietnam, one of the most important coffee-growing regions in the country’s Central Highlands. Processed using the Black Honey method, it offers a full-bodied, sweet profile with tasting notes of sugar cane, nutmeg, and fruit.

About the Producer

Ea Tân Cooperative has been growing coffee since 1990. The growing area is situated at a relatively high elevation for Robusta production, allowing the coffee cherries to ripen more slowly than in many other parts of Vietnam. This extended maturation contributes to a higher sugar content in the fruit, providing an excellent foundation for sweetness and complexity in the cup.

Varieties and Cultivation

The cooperative cultivates several varieties, including TR4 and TR9, robust cultivars developed for strong disease resistance and high productivity. Individual farms are relatively small, typically around 3-4 hectares per household. The cooperative therefore coordinates cultivation and processing to ensure more consistent quality and lower production costs.

Process: Black Honey

The Black Honey process involves leaving a portion of the fruit mucilage on the beans during drying. This creates greater sweetness, body, and fruitiness than a traditionally washed process, while still preserving a clean and well-defined cup profile.

Sustainability and Quality

Following its participation in the Simexco Sustainability Program in 2009, the cooperative has placed increased emphasis on both quality and environmental responsibility. It has developed several processing methods, including honey, natural, washed, and semi-washed coffees. Fruit trees such as avocado and durian are planted to provide additional income and contribute to a more sustainable agricultural landscape. The cooperative also prefers ground cover management over the use of herbicides and actively works to reduce greenhouse gas emissions.
